The weather is getting cooler and that means soup in our house. Today, I am sharing my recipe for Chicken Tortilla Soup.
Ingredients:
2-3 Tbsp. oil
3 cloves garlic, minced
1 onion, chopped
6 half chicken breasts
2 cans Rotel tomatoes w/chilies or chunky salsa
1 can black beans, drained and rinsed
1 can whole kernel corn
1 can cream of chicken soup
1 qt. chicken broth (I used the broth that I boiled the chicken in.)
2 Tbsp. cumin
1 Tbsp. chili powder
1 tsp. salt
1/2 tsp. cayenne pepper (or more to taste)
juice of half lime
Garnish:
tortilla chips
Mexican cheese, shredded
sour cream
I don't like my food very hot, so for you folks in the southwest, you may want to spice it up a bit. This is a very hearty soup that will serve as a meal.

Thank you, thank you! I've been looking for good recipes and Chicken Tortilla Soup is one of my favs but I didn't have a recipe for it. This looks delicious and now with the weather becoming cooler I'm sure I'll be making it quite a bit.
